Stir-fried Morning Glory For A Summer Dinner!

I don’t like eating vegetables and I think many other people are like me :p However, I love Morning glory. Love every way that it can be made, I love the way it is <3.

There are many different ways to cook Morning Glory, but today I will talk about how Vietnamese made them stir-fried.

Stir-fried Morning Glory is a dish for dinner, especially in the Summer cause it normally can only be bought in the Summer. This dish is a healthy with gluten-free, dairy-free and a lovely dish :))) Actually, I don’t understand why it’s name in English is Morning Glory, I cant explain that, anw it is a lovely name. But let me tell you the name that we call it in Vietnam, It’s called ‘Rau Muong’ not even close to the English name ^^.

It is easy to cook, easy to eat and can fit with anyone taste. Below is the recipe that I found the most close to this dish. So let’s take a look.

INGREDIENTS

  • 1 bunch (~400g) morning glory vegetable
  • 4-5 garlic cloves, smashed with the back of a big knife
  • 1 tsp soya sauce (soya sauce usually has gluten in it. Check for gluten-free on the label.)
  • 1 tbsp rice bran oil (or a knob of butter)
  • 1 tbsp lime juice
  • 3 cups of water

INSTRUCTIONS

  • Wash the morning glory greens under running water until it runs clear. Cut the roots if required.
  • Bring 3 cups of water to boil
  • Blanch the greens in boiling water for just about a minute. We don’t want the greens to lose their crunchiness or the bright colour. Immediately drain and run under cold water to stop the cooking process.
  • Heat oil in a wok or a shallow pan. Add the smashed garlic cloves and sauté till they just start to turn brown.
  • Add the blanched water spinach, soya sauce and lime juice.
  • Mix well such that the vegetable is coated with the sauce. Cook for about a couple of minutes. It doesn’t take long for morning glory to get to that fine texture of tender-crisp.
  • Remove from wok into the serving plate immediately.

NOTE

There is another way to do with the lime juice as normally after cooking the Morning Glory and put it on the plate, I will add a little bit of Lime Juice on top as a dressing, then slowly mix them and have them with rice. That’s my way to serve it and I think it’s nice. However, It depends on you my dear ^^.
